21 Aug Quinoa Spring Rolls with Peanut Dipping Sauce Recipe
Cucumber (Julienned) 1 Cup
Carrot (Julienned) 1 Cup
Red Bell Pepper (Julienned) 1 Cup
Fresh Cilantro (Chopped) 1 Cup
Chili Garlic Sauce 3/4 Tsp
Soy Sauce 3 Tbsp
Quinoa (Cooked) 1 Cup
Sugar 2 Tbsp
Peanut Butter (Creamy) 1/2 Cup
Rice Spring Roll Papers 10 Sheets
Hot Water 1 Cup
1. Cook the quinoa as per directions on package.
2. Put the rice sheets in the hot water so they become soft for 30 to 40 mins.
3. Put them on the chopping board and on each one put cooked quinoa, carrot, cucumber, bell pepper and fresh cilantro and start rolling them.
Mix the peanut butter, soy sauce, chili garlic sauce and sugar together, and whipped to mix well. Serve along with the spring rolls.
